Mangalitsa Pork Wine Dinner

In collaboration with Eric and Sophie Banh and Johnny Zhu, Monsoon
Capitol Hill will be presenting 6 courses of Mangalitsa Pork with wine
pairings on Wednesday May 27th. Mangalitsa Pigs, also known as
Hungarian Wooly Pigs, are prized for their rich, and remarkably clean
tasting fat. Heath Putnam, owner of the Wooly Pigs Co. will be
providing various cuts from his own stock of Mangalitsas, and will be
present at the dinner to tell the guests a bit about the pigs that they
are eating. Seatings will be at 6pm and 8:30pm. The cost of the dinner
will be $82 including wine.

Crispy Tourchon of Mangalitsa Head with Green Garlic Mayonnaise, Pickled Vegetables and Miner's Lettuce
Mangalitsa Belly with Charred Favas, Bean Sprouts, Lotus Stems and Pork Jus
Mangalitsa Shoulder Confit with Poached Egg, Asparagus, Spring Onion and Parmesan/Herb Crumble
Sous-Vide Mangalitsa Sirloin Chop with Corn Succotash, Corn Husk Gelee, Coconut Powder and Cilantro Salt
Caramelized Mangalitsa porchetta, White Bean Creme, Ramps, Wood Sorrel and Morels
Strawberry "Tart" with Mangalitsa Liquid Sable, Yuzu Curd and Lemon Verbena

Many thanks to Mark for preparing the wonderful Mangalitsa pork dinner, even though he mentioned it was his first time cooking it. The Mangalitsa pork belly was the best piece of pork that i have ever tasted! I'll see you guys around in Spring Hill.
